Summer solstice marks the official beginning of the summer, but to me nothing says ‘summer is here’ like the start of the berry season. Fragrant strawberry is the first one to offer its juiciness and vitamin boost after the cooler months of the year.
Fresh strawberry jam brings such a bright start to the breakfast table and I always craved a healthier alternative that has low amounts of sugar and really honours the flavoursome strawberry. I came up with a recipe that has no sugar added and is a raw version that contains all the nutrition a fresh strawberry does. Great treat for breakfasts and desserts.
Makes 1 jar (250-300g)
250g fresh strawberries
7 tbsp. Chia seeds*
½ tbsp. vanilla seeds
2 tbsp. maple syrup (optional)
Blend the strawberries until smooth and liquid.
Add chia seeds, vanilla seeds and maple syrup (optional).
Mix everything thoroughly and leave in the fridge to soak (at least 3h, but best overnight).
* Add 2 more tbsp. of chia seeds if want a denser jam.
