Simple doesn’t have to be unhealthy! Simple often can be even more beneficial and nutritious, especially if you use unprocessed wholefoods, like fruits and vegetables. This breakfast, snack or a small lunch recipe has been a favourite of mine for years as it is tasty, filling and great on the go.
Time: 5-15 minutes
2 medium-sized slices of whole grain rye bread 1 large avocado 2 eggs A handful of pine nuts Sea salt
Chili powder (optional)
Boil or soft-boil the egg, depending on your preferance.
Mash the avocado and spread on the slices of bread.
Add the boiled egg on top of the toast, sprinkle with pine nuts, sea salt and chili powder. Voila!
