This soup is perfect for a chilly day. Warming, healthy and easy to make! Green peas are rich in vitamin K, which is important for bone health, as well as vitamin C, which is especially needed to support immunity during flu season.
Time: 30 minutes
3 tbsp. of olive oil
4 cloves chopped garlic 1 chopped onion 2 diced courgettes
3 medium chopped potatoes 2 cups of green peas
2 cups of vegetable stock 4 tbsp. chopped fresh basil
The juice from ½ lemon Salt Pepper
4 tbsp. of grated parmesan (optional)
Cook garlic and 1 tbsp. of fresh basil in a large pot with olive oil and a tbsp. of water for a couple of minutes. Add onion and cook for further 5min or so, until onion softens.
Add the courgette and a ½ cup of stock. Cook for a few more minutes then add the potatoes and the rest of the stock. Carry on cooking. When potatoes are soft, add peas, the rest of fresh basil, lemon juice, salt and pepper to taste and cook for 5- 10 more minutes, until flavours are well mixed.
Using a blender, mix until well blended.
Before serving can sprinkle the soup with parmesan.
