Once again I’m sharing one of my chia favourites. Packed with fibre and healthy fats, chia seeds are my go-to when I’m feeling stretched for time. This simple recipe is great for breakfast, snack or even a dessert.
If you haven’t yet heard about the incredible benefits of pomegranate, one thing to know is that it has one of the highest levels of antioxidants among foods! What that means is that it’s an excellent food for anti-ageing (a great choice in the colder months).
Time: 5 minutes
1 cup of coconut milk 4 tbs of chia seeds A pinch of vanilla powder 1/2 pomegranate
Blend and the ingredients except the pomegranate in a mason jar. Let it sit overnight. Stir once before going to bed.
Sprinkle pomegranate seeds before serving.
