This time of the year it can get challenging to find some fresh, local and nutritious green veg. My favourite way to load up on vitamins and minerals is to sprout my own tiny greens!
Sprouts contain vitamins, minerals, essential fatty acids, enzymes and protein. According to research, they can help protect against cancer, not to mention their excellent ability to boost detoxification and vitality.
Sprouts can be added to salads, avocado toast, soup and whatever else your heart desired! This is one of my favourite salad recipes on the go.
Time: 15 minutes
2 cups of spinach
1 red onions
1/4 cup of olives
2 tbsp. of olive oil
1/2 cup of sprouts
100 grams of feta cheese
Salt and black pepper
Chop all the vegetables into cubes and mix in a bowl.
Add the feta cheese (cubed or crumble), olive oil and salt and pepper to taste. Squeeze lemon juice to finish.
