The evenings are getting longer and there’s more temptation to have comfort foods all day, everyday. But comfort foods can also be flavoursome, nourishing and nurturing, not just laden in sugar and high in fat.
To me, autumn is synonymous with opening the good old curry cupboard and spicing it up. Spices, especially cinnamon and traditional curry mixes can really give us the nourishment we need in the autumn, which can help curb cravings and avoid you reaching for those mars bars.
I’d love to share my quick and easy daal recipe, that’s perfect for an autumn evening just like this one…
Time: 45 minutes
1 garlic clove
1 tbs olive oil
1/2 tbsp grated, fresh ginger
1/2 tsp mustard seeds
1/2 tsp of coriander
1/4 tsp grated cumin
1/2 tsp ground cinnamon
1 cup of red lentils
200 grams of chopped tomatoes
1 cup of coconut milk
1 stock cube
Peel onions, carrots and garlic. Grate onion and carrots and chop the garlic.
Make the stock with 1l of water. Add to the side.
Heat the oil, add a splash of water and add mustard seeds, ginger, coriander, cumin and cinnamon. Roast the spice for a few minutes.
Add onion, carrot and garlic in the olive oil for a few minutes until it starts to soften.
Add the lentils and stir thoroughly, then add crushed tomatoes, coconut milk and the stock. Let it simmer with a lid for 25-30 minutes.
Season with salt and lime juice.
