Cacao Pistachio Balls

This cacao pistachio balls recipe is a great snack to keep you fuelled during your day, especially useful in cooler months of the year. Cacao is a high source of plant-based iron, perfect as a pick-me-up and great for its mood-boosting properties.

When stuck for gift ideas, this is one of my favourite recipes to batch- make some last minute goodies. Although pistachios give the balls the wonderful green colour, you can easily substitute the pistachio for cashews or almonds.

Serves: 15

Time: 20 minutes


½ cup pistachios (de-shelled)

¼ cup cacao powder

½ cup desiccated (shredded) coconut

8 medjool dates

1 tsp vanilla extract

Pinch of salt

Crushed pistachios to top


  1. Soak your dates for 10 minutes in warm water.

  2. In a food processor, add your pistachios, coconut, cacao powder and salt. Pulse the mixture until finely ground.

  3. Drain your dates, add them to the mix and add the vanilla extract. Pulse until clumps form.

  4. Roll the mixture into bite-sized balls and sprinkle with crushed pistachios.

  5. Serve and enjoy!
